Lush Avocado Mayonnaise

This is perfect for dunking oven roasted sweet potato chips into, or serving alongside smoked salmon and leafy greens.
For a creamy, healthy salad dressing simple add a little more water when blending!

Ingredients

  • 2 avocados
  • 3 tablespoons Grove avocado oil
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1/2 teaspoon sea salt

Method

CUT the avocados in half and remove the stones.
SCOOP out the flesh into a blender and add the avocado oil, lemon juice, water and salt.
BLEND for 30 seconds until smooth and creamy.
SPOON into a glass jar or container and store in the fridge until needed.
